Is there a way to add color to a cake that's already been baked??

Not really. You could spray or drizzle some colored sugar syrup but it's only going to penetrate the top of the cake.

I may just have to do a jello poke cake.  This cake is supposed to be rainbow colors and I totally screwed up and baked my cakes already without doing the colors.  She will be picking it up tomorrow morning.  :(

Sounds like you have to re-bake, but I love the idea of a rainbow Jello poke cake - loved Jello cakes as a kid!

Aren't poke cakes super moist, like, unstack-able moist? I have never actually had one, so just assuming.

I would re-bake, personally.

I don't remember ever having one either, but I'm desperate lol.  I am also concerned that it will be too moist to stack.. This is a 2 tier/4 layer cake.  I have decided to make colored sugar syrup and inject with a syringe.  Going to add little bits here and there in hopes that it won't make the cake soggy.  *crossing fingers* Wish me luck!!  :)

I wish I did, but I really don't since I just finished today's order last night and this is one of two that are due tomorrow - yikes!!  This is why I always bake my cakes ahead, to allow myself time to decorate.  This is the first time I've messed up on the cake baking lol.

Re-Bake! Injecting sugar syrup will not work- the cake will get soggy if you use enough to make a color change

Rosie93095 is right. I tried stacking one - just to see what it would do. I love making it with orange jell-o and a 7 minute frosting. It stacked, but was really difficult. Part of the side fell off! The 7 minute frosting covered up the mistake, but it would have looked horrible if I hadn't used it. I took it to work. They loved it, but I would never sell it to someone. 

 

It will also be difficult to frost if you do the jell-o syrup!

Although the decision to rebake is off putting most of the time, I know that when I have to do it I am always always glad that I did! Good Luck!

AThanks to all for your advice! :) It was a cake baking marathon at my house yesterday, and a LONG night for decorating, but I did manage to get them both finished. My customers were thrilled with their cakes and I know that one little 8 yr old girl is going to be extremely happy with her Hello Kitty Rainbow Swirl cake today! And I learned a couple valuable lessons in the process. ;)
