AFor my next cake I'm going to try ganache instead of BC for frosting between layers and the crumb coat before covering with fondant. Can you freeze the cake after the ganache is on, but before the fondant? If so, any advice on the process of freezing/thawing would be appreciated. :)

Ganache is awesome, hopefully you find it easy to make and work with. I've never frozen my cake after it's been ganached - normally I allow the cake to settle overnight on the bench before covering in fondant. Is there a reason that you need to freeze the cake after it's ganached? I know that ganache can be frozen (I often make more than I need) but not sure about freezing the entire ganached cake. I'm sure someone else will be able to help out. Best of luck, you won't turn back once you try ganache, it's so easy to work with and tastes delicious :)

Yes you can. I set it in the freezer unwrapped, just til the ganache is set hard to the touch, then wrap tightly in cling wrap, then aluminum foil, then in it's box.

When I want to defrost it, I take off the wrapping, put it back in it's box and defrost it in the fridge.
