I have no idea why, but the last 2 times I have make a pumpkin cake with cream cheese frosting, the frosting bubbles up off the cake and sort of melts off. Of course this has happened only on wedding cakes! My cupcakes, sheet cakes, etc all come out fine. Any other flavor cake with cream cheese frosting is fine too. What am I doing wrong? What can I do to prevent this again?
