Help / Advice With.. Piping Royal Icing Transfers???

Hello cake experts!
I have a cake order for next week for a birthday cake, covered in white fondant with red lettering. I want to write on the cake with royal icing, but I am too scared to do it free hand! Normally with letters I use fondant cut outs but this cake I want to use icing as it quite alot of letters... ¨Happy 60th Birthday Grandad¨.
I have read somewhere on the internet that you can print out the phrase and use it as a template, by putting it a plastic sleeve sheet and pipe over it. I have just done a quick trial today and wating for the icing to dry. This seems too good to be true!!!!!!!!
Does this actually work???? Or will it break when I try and lift it off the plastic and onto to the cake??
How long does it take to dry?? How do I attach the letters to the fondant cake???

I usually tape a piece of parchment paper to my print out, then trace. It will dry within a day or so - depends on how big. Obviously, the longer you can leave it to dry the better. And always make extra in case one of the letter breaks!
