So I just realized I got the date wrong with a cake Im making... she wants it Sunday not Saturday like I thought. I know its only one day so Im not tooooo worried !
Here is my question (in a roundabout way lol) so I baked the cakes Tuesday, stuck them in the freezer til today (Thursday) I ganached them (then I realized that she wants them Sun morning and not Sat morning) I was planning on decorating the cakes tomorrow (fondant) because she wants to pick the cakes up early in the morning. Soooooo the question..... what do I do with the ganached cakes for an extra day? Would you:
a) leave the ganached cakes in the fridge til sat and decorate then?
B) leave the ganached cakes (covered) out of the fridge on the counter?
c) cover the cake in fondant Friday and just keep it in a cool place for the extra day?
d) PLEASE DONT TELL ME THIS ONE! bake more cakes and start again! lol

I remember for my daughters 2nd birthday I took a cake course from Planet Cake in Sydney. I was about 10 days before her actual birthday. Well at the advice of the cake instructors, I just kept the fondant covered cake in a cool place until her birthday and served it up then.... it was fine!
Anyhooooo, what would you do? Thanks for any replies :)

I'm a little confused - so forgive me if I state the obvious...
You HAD planned on delivering the cake on Saturday? for a function on Saturday afternoon/evening?
If this is the case - then just follow your original timeplan - I don't know why you are thinking you can't.
I NEVER leave cakes to the 'last minute decorating ' like you are suggesting.
If I have Saturday deliveries of wedding cakes - they are always completed Friday - most often by lunchtime, unless I have more than normal.
Finish your cake and don't stress
My normal timeplan for my mudcake, ganached and fondanted is... depending on level of decoration requried.
Bake.... Monday/Tues
Ganache Tues/Wed
Cover - Wed/Thurs
Decorate - Thurs/Fri
If a design has loads of piping or other labour intensive work - I will often shift things back a day
If weather where you are is warming up - I would make sure cakes are kept at 23deg or less, even if I had to use air-con

I just don't know if I should leave the ganached cake in the fridge and extra day (Leave it in the fridge Friday, and decorate it Saturday), or if I should just go ahead and finish the cake tomorrow (Friday) and let it sit in a cool place til she picks it up early Sunday morning. Which would be better do you think? Or it wouldn't make much difference either way?

it wont make any difference either way. At least you are a day early and not a day late :)

Finish the cake Friday and let it sit in a cool place til it is picked up Sunday morning. Not sure where you are in Australia - but I never refrigerate cakes - especailly mudcakes with ganache .... and NEVER with fondant.
I know people on here say they have done it successfully - but for me it is a no-go
ABearing in mind that you've left a finished cake for 10 days successfully before, on the advice of a very well known bakery, I'm not sure why you're stressing over doing it for one day! Finish the cake tomorrow and leave it out, it will be fine!
