ADoes anyone have a great layered cake with cheesecake layer in between recipe? I would like to do one for an anniversary gift. thanks for any ideas. Pat

i mean just about any cheesecake recipe can be used as a layer in a layer cake--i like to use a heavier textured  cake to go with so that the arm amps needed to slice & serve the cheese layer does not tear up the softer cakes--for example angel food might not be the best choice--but could work as a top layer--

 

the biggie here is to keep it safe--cream cheese has a shelf life of four hours out of temperature --that is between 40 and 140 degrees--when it is out of the fridge and not in the oven--so just be mindful of that too--

 

look for brownie bottom cheesecake recipes--

 

another thought is to handle the cheesecake layer frozen--so much easier to build the cake--cheesecake freezes perfectly--make it with or without the crust--

 

sometimes i add gelatin to a cream cheese filling i make with sour cream in it--like two parts cc to one/half part sc--then add some powdered sugar to sweeten and i add more lemon juice than vanilla--some gelatine--so good! i often drain the water out of the sc--this filling stand up great between layers--can place it nice & thick--

Agreat idea freezing cheese cake. I would think the brownie layer would be a bit dry so maybe a chocolate would be a better choice for cake due to the fact it is heavier than a white. Thanks for the tips.
