Hello! I've decided to start working with fondant soon. I was wondering which would be better to use to decorate cakes, a homemade marshmallow fondant or a store bought fondant? And if you suggest store bought fondant, what kind do you recommend? Thanks!

I used store bought once and never used it again.  I use the MMF it has a better taste and I have just gotten used to working with it.

I make my own, it isn't marshmallow fondant, it's the basic traditional recipe. It's a heck of a lot cheaper to make it than to buy it.

I don't sell cakes yet, still working on my techniques.  That being said, I really like making the MFF fondant but keep store bought Wilton on hand for when I don't have the time to make it.  I find Wilton's to be okay and it is easy to work with.

If you haven't worked with fondant before I would suggest buying fondant first and working with it a little. That way when you make your fondant you will have a better idea of what the consistency should be.  A lot of people like the MMF.  I only tried it a couple of times and mine was always too soft, that's when I came across MFF (Michelle Foster's Fondant) and have been using it ever since.  You will find it is all a matter of personal preference so try everything and have fun.

I have always been a fan of homemade fondant.  If you have the time, I would say go for it.

I use to use homemade fondant, but I have moved to commercial stuff (Satin Ice and Fondarific).  I try and spend more time on my creations rather then making the fondant itself.  Most of my clients don't even eat the fondant, but everyone looks and sees the cake.

My suggestion would be to see what is going to give you the greatest ROI, and focus your efforts there.  If you competitive advantage in your area is the taste of your fondant then make your own, if not spend your efforts elsewhere.

MMF doesn't take long at all.  I just microwave my marshmallow and add it to the rest of the ingredients in the bowl of my Kitchen Aide mixer. I can tell by the way it mixes when it is ready.  I just turn it over to my table knead it a bit and work with it.

I don't like store bought fondant, only because it's expensive.  Michelle Foster's Fondant recipe is extremely inexpensive, tastes good and comes out great.  I love the MMF as well, but it's makes SUCH a sticky mess in my kitchen.

AI started off using Wilton, I think it's important to start off with a premade fondant to know what it's supposed to feel like and what it's supposed to do. But it's not the greatest tasting product and it gets expensive over time. I went to making MMF and now I'm making Toba Garrett's recipe for plain old regular fondant.

At a point it becomes more efficient to just buy it in bulk, the time taken to make it is more valuable than the savings from making your own, but the average hobby decorator probably isn't falling into this category.
