AIm wanting to make sugar cookies but I realized I don't have any baking powder would it be OK without it
AThere are specifically recipes that contain no leaveners to reduce spreading. So it's possible to make cookies without it. I would search for a recipe designed that way though instead of just leaving it out and crossing your fingers.
I make mine without it all the time. The original recipe called for it and I took it out to reduce spreading and it has worked like a charm.
AI use 1 1/2# unsalted butter 4 eggs 3 cups sugar 1 tablespoon of salt vanilla extract and 10 cups of ap flour. You can make the recipe smaller.
I cream together 1 cup butter with 2 cups sugar. Then I add two eggs and mix them in. Finally, I add 3.5 cups of flour, 1 teaspoon of vanilla, 1/2 teaspoon of salt and two tablespoons of milk. After it's all mixed I refrigerate it for a few hours. Then I let it soften to roll to 1/4" and freeze the cut cookies. I bake the frozen dough on cold pans at 375 and rotate the pans halfway through. Cooking time varies on how big the cookies are. Mine never spread.
