A friend asked me to make a grooms cake for her wedding and I am having an issue. The venue is 30 minutes away from my house. The cake will be strawberry with buttercream icing and chocolate ganash kind of covering the top and sides then a scene on top of that with the his/her topper. Should I make the chocolate at the venue or will it be sturdy enough to hold/not melt in the car ride there. This is my first grooms cake AND first time to use ganash. So I'm a little bit nervous about it. PLEASE help!!!!!!!!!!!!!!!!!!!!!!!!
If the ganache is made at the appropriate consistency and if you cake is kept air conditioned, all should be well for a 30 minute delivery. Just make sure you do not add the topper details until you get there and that your car is very well cooled and that no sun can get on the cake in transit. I delivered a ganache covered cake just a few weeks ago in 90 degree whether. I followed the steps above and had no problems.
