AI'm making a cake for a surprise retirement party for my hubby. Making a NYC skyline cake, been making buildings for a loooooong time, while he's at work. Anyway, I made the cakes, 10, 8, and 6. Froze them, first time I have done that, a little nervous about it. I have to defrost the day before to torte, stack and decorate. I will not be there to transport it. Am very nervous that it will be too warm and the cake will to hold up to the transport. Any advice? Also, I am going to have to make the buttwrcream in advance. Can I freeze that also? Thank you in advance.
If you have space in your fridge to put the entire stacked cake before transporting it, should be ok! I've used a center dowel in cases like that, just to be extra safe. I know I drive really carefully when transporting a cake, but can't rely on others to do the same.
AThanks for the reply. I'm going to have to decorate the night before and leave out. That's making me really nervous. Maybe if I was transporting it I would feel better, but mydaughters are doing that. Ohhhhh
