my mixer's speed can mess up my cake

Hi everyone on this sweet site icon_smile.gif

This concern that I'm bringing you now is very important for me to clarify. That's why I ask you please to help me out with this.

I've seen many videos and recipes where they indicate what's the speed you should use on your mixer. My question is, does the mixer's speed can influence in the final result of my cakes and/or frostings? And by the way, can I use any kind or brand of mixers to make my cakes and frostings?

Yes you can use anything. Some are better than others but all of them work. The speed doesn't so much effect it but how long you mix it. I tend to keep my speed low so that I can keep an eye on it and so that nothing flies out when adding flour or other dry ingredients. HTH

The speed can affect your cake if it causes you to over mix your cake batter. bct806 gave good advice about keeping the speed low so you don't chance over mixing. That can cause your cake to fall, which is a sad, sad thing.
