I am wondering if you can frost chocolate ganache over a layer of ganache that has been poured? I poured it tonight and want to put on another layer. is there any other way to put on another layer of ganache once it has set?

Here's a recipe where they do it. According to this as long as the first layer sets up first your ok, the suggest sticking in refrigerator/freezer then pouring second layer on.
I have never done this but I've poured ganache over a cake and the next day added white ganache drizzle-I don't see a big difference between the methods.

I only made a half-batch of Pound Cake to practice on. Ddaigle is correct, it does get easier with practice.
