AI was wondering after decorating a cake with fondant could you freeze it ahead of time?? Would it sweat once it comes to room temperature? Would the fondant decorations fall off? Also I'm doing cupcakes with the frosting resembling grass and was wondering would it freeze well

When I need to, I put the cake in its proper size cake box, Wrap the whole thing butcher paper then with plastic food wrap.

 

When I need it, like the night before, I remove from the freezer, place in the refrigerator for about 3-4 hours depending on the size of the cake.  The bigger the cake the more time it needs to come to room temp.  Then out to the counter.  I let it sit on the counter or shelf for about the same amount of time.

 

Some cakes will sweat, but I leave it alone and it dries up.  You just need to give it the time.
