Hi everyone - I am making 4 doz cupcakes for a baby shower this Sunday.  I plan to bake the cupcakes Saturday, however, trying to determine when its best to frost or if it matters.  Here is my dilemma:

Frost on Saturday:  If i frost on Saturday I will have to put cupcakes in fridge since using SMBC or Whipped Buttercream.  Not crazy about putting in fridge overnight as I am worried they will dry out.

Frost on Sunday: basically my dilemma here is time.  I will only have about 2 hours to frost and decorate (fondant decorations will be made).

I guess really my question is how will cupcakes hold up if i refrigerate, frosted overnight? Stored in cake boxes.

I would also cover cake boxes wtih heavy foil. Thats just me. I probably would wrap as i said and stick in freezer overnite. Have frozen cakes covered with smbc many times.

Thanks- however, freezer space is a bit of an issue at this time.
