Hello, 

 

Im planning to make a chocolate wedding cake with a white mint bc icing, but I can't figure out what filling to use for this combination ... any suggestions and/or recipes?

AI make chocolate cupcakes with dark chocolate ganache on top with peppermint buttercream and they are to die for!

It sounds delicious!! I would use a cream filling, you don't want to overpower the other flavors and I think it would compliment them well. Just my thoughts :) I am sure it will be amazing

definately would do a whipped cream filling as well.. because the mint itself has its own powerful flavor.. you want to keep this light and fresh..

AI would probably do a chocolate ganache or a marshmallow frosting.

I use a mint cream cheese filling and chocolate mint ganache for my mint cakes.  You could also use the mint bc you are putting on top.  I usually make 3 or 4 layers of cake and alternate the 2 fillings, so it is pretty when cut, and not too much of one or the other.

AMaybe a white chocolate ganache flavored with some creme de menthe.
