AI had to do a wedding cake this weekend. The bride gave me a color swatch and wanted the fondant to match. Kind of a nightmare... I hate coloring fondant bc it changed the consistency and I find it dries it out and looks like elephant skin and just doesn't behave. Makes me crazy actually! Plus it takes forever to color large amounts. (Took me 2 hours to color my fondant... I didn't have it all out for 2 hours, I took a bit at a time and colored it so it wouldn't be crazy dry.) Anyways, it hit me that it would probably be alot easier to just cover the cakes with white fondant and then airbrush it the color I want. Of course I thought of that at 10:00 at night, lol and didn't have the right color to airbrush with. I bought my airbrush at Christmas but haven't used it yet... Just been so busy and haven't taken the time to crack it out.
So my question to all of you is, do you prefer coloring your fondant or for more difficult, deep colors, do you airbrush your cakes? And if you have to airbrush a cake a solid color, do you have any tips?
Here is the cake I did... The fondant gave me sooo much grief. Way more than usual bc I had to custom color it. (I think I aged 10 years making it, lol)

I love airbrushing cakes rather than coloring the fondant. I am only a beginner but the biggest tip I can give you is to not try and airbrush to the desired color in one hit as you will end up with drips (speaks the lady from experience). You need to build the color up slowly in layers.
AI like to mix colored fondant. I very rarely add gel color. I mix red & white for pink, etc.
I would think some of the more difficult color variations would be difficult to airbrush. At the least, the mixing of airbrush colors would be the same as mixing the fondant colors.

That's what I do too. I do everything I can to avoid using gel colors to color fondant. I simply hate doing it.
I think I'm going to do up a cake for my family and play with my airbrush. I think it'll be worth the time to figure it out!!
I almost always color the fondant. Airbrushing leaves a more delicate finish that can easily be damaged by a misplaced finger and it can emphasize any little imperfection in the fondant. So I only airbrush when needed like when I need a color that's difficult to achieve in fondant, say a vivid fuschia. Or a if certain effect is needed, like a sunset or other graduated color. I've also airbrushed cake with edible gold and silver.
This is a cake I did in my first few months - I'd do the top differently now.

Excellent point. I tend to only airbrush colors that are really dark or bright, things that are hard to do with dying fondant. Totally limited to color options if you want consistency when airbrushing.
