Gelatin Lumps In White Chocolate Mousse! Help!

Hi cake experts,

 

A friend of mine (who isn't a member here, that's why I'm asking ;) ) just made a large batch of white chocolate mousse with gelatin and now that it has set it has lumps of gelatin in it! Is there anything that can be doe to save it?

Unfortunately not. To get rid of the lumps you would have to heat the mousse and that would destroy the air in the mousse and therefore destroy the texture.

She will have to do it again. Once she has dissolved the gelatin, she should stir it a bit and then add 2-3 tablespoons of the mousse-mixture, stir again until blended and then carefully add the gelatin to the rest of the ingredients while whisiking vigoroursly.
