AHi guys! Just wondering if any of you have done cornelli lace on SMBC? I have only ever done it with royal icing on fondant but my client is requesting SMBC. Do I use the buttercream to scroll on or do I use the SMBC as the base and then royal icing on top for the lace? Thanks!

You don't need to use royal.  I have done many, many b'cream cakes using cornelli but never SMBC, however I would think you could just use it over the base/finish icing.  If not, then use b'cream.  If you'd rather make royal than b'cream I guess it would work - not sure as it has much more 'fat' than ABC - just not sure how royal will hold up on that.  You could do a test piece - just a little sq to see if it's o.k. over time.

^^^^^^^^ This.  I prefer BC to RI when doing cornelli.  You might give it a try and see how it works for you thumbs_up.gif

AThanks guys! I'm just worried that the heat of my hand will separate the SMBC in the bag. SMBC has not been the best of friend to me and its either a hit or miss. : ) I really wish I could do it out of ABC
