hi, i always make frosted cupcakes and store them in an airtight container at room temp.

i've done many fondant cupcakes but they all have been bake, decorated and sold the same day.

But a friend who owns a sushi restaurants wants me to sell him cupcakes with some sushi-like fondant decoration. once i have decorated the cupcake with the frosting and the fondant how long it lasts and how should i store it? is there a way they can hold up to 3 days?

Every recipe is different. Do shelf life testing by storing a few finished cupcakes. Try them after they've sat for one day, then two days, etc.
