i need a good canoli filling for canolies looking for a ricotta one something that will fill 12 canolies, i have done them in the past for the house but they came out runny i want something that will be firm and filling. and not to complicated

AYou need to make sure you use the right type of ricotta, or it will be ruuny. The one I use is ricotta impastata.

AMy mom used to drain the ricotta in cheese cloth, in the fridge. Sorry I don't have her recipe.

Impastata ricotta is what you need, however it's really difficult to find.  You can drain regular full fat ricotta for a day or two in the fridge and that should make it thick enough.  What I do is fold in some bianco mangiare to make it creamier and then flavor with a drop or two of nutmeg oil (must have) and cinnamon.  Then fold in chocolate chips if you want.

drain the ricotta in cheesecloth overnight.  Do not double recipe....it will be soup.  after the spices and chips or fruit are added let sit in a plastic container overnight with plastic wrap.  It will firm up a bit  nicer.
