Will This Filling Spoil?

Hey guys,

I've been asked to make a vanilla cake with a vanilla type pudding and strawberries and banana slices. I have no idea if this is even possible. Not to sure what to do. Does anyone have any other suggestions. The cake has to be made a day before, and covered in fondant as well. Wouldn't the fruit go bad anyways if I couldn't refrigerate it? I'm trying to think of an alternative idea to recommend if anyone has any let me know. I'm stumped. There is no cake supply store near me, it's about 2+ hours away and I haven't been able to find any sort of bettercreme, or pastry pride type product to try to use. Should I order something offline? Help =/.

Yes, it will spoil if not refrigerated.  This is where you play the professional card and tell them what is available that will not poison their guests.  You said you are too far away to get sleeved filling with preservatives. 

 

Maybe make a banana cake with a strawberry buttercream.

 

Change the cake to what can be done or decline the job.

Thanks, I figured it would go bad or get weird but i figured i'd ask to be 100% sure.
