I Need Some Help

ALet me start by saying I'm new to this baking stuff. I have a party that I'm making a cake for in 5 days and I'm working everyday so I need to be able to do a little at a time. So here are my questions. 1- after making a pound cake how do I store it for a few days? 2- how do I store it after I put ganache on it? And 3- how do I store it after the ganache and I put fondant on? Would butter cream be easier? Also it's very hot here and the party is outside by a pool. Thanks in advance for all the help. Any tips would be appreciated.

I am having the same issue, I live in Missouri where the heat and humidity create a cake hell if you will. Anyway, I have a cake I'm doing and the event is August 18th.  It is vanilla and strawberry buttercream. Here is my problem. I broke my ankle and am having the third of three surgeries on August 15 - way to go me!

 

Anyway, here is what I plan to do, bake cakes late night August 14, let them cool, wrap and freeze them. August 16, (day after surgery) pull them out, level, torte, fill and crumb-coat. Then on August 17 I will finish decorating said cake an deliver on August 18th.

 

I think if you are able to spread the work out like that you should be fine. Granted I HAVE to spread out the work, thanks to a broken ankle and having surgery, but I think that would work fine for you as well.

Pound cake has a lot of butter in it. It should be fine in the fridge for a couple of days, but wrapped very well in saran wrap. 

 

you can put it right in the fridge with the ganache on it, be sure that there are no strong odors or flavors in the fridge, like onion, and that it's higher than anything that can spill or flake onto it. 

 

you can leave it out after the fondant is on. However, once you move the cake out doors on a hot or humid day, you're not going to have much control over the quality of the decorations. 

 

one other thing to consider, pound cake and ganache are a very rich combination, especially for  the summer. a simple buttercream or stabilized whipped cream and fruit combo might be more palatable. 

coconut holds up really well, or even a layer of cookie crumbs or cake crumbs on the outside of the cake.
