Hi There, I'm a cake newbie.  I've made a few for friends and now I have a wedding cake to make.  The problem is the cake needs to be collected 5 days before it will be eaten.  I was planning on making a mud cake with swiss meringue butter cream filling and then covered in dark choc ganache and fondant.  I was hoping to make the cake in advance and freeze (to give myself more time to ensure I can get smooth ganache and fondant etc), but I am a bit concerned that the cake will be defrosted then for 5 days prior to the wedding (as the cake will be collected from me and then driven for approx 3 hrs then kept in fridge until the big day).

Would I be better to just make and decorate the cake 2-3 days before collection and then it can stay in the fridge for the 5 days (so will only be about a week old when eaten)?  I have tested the cake and it's fine after a week or even longer in the fridge). 

I just really wanted to give my self a bit more time and not have a mad last minute panic trying to get the cake all done at the last minute.

APersonally, four days is my limit for a cake. If you have tested yours and it is good after a week, I guess you can go that route. I wouldn't try for any longer.

That seems like a day or two past what I would be comfortable with...I would be afraid the filling and such would start to break down and separate.   Maybe someone else has done a cake this long before an event without freezing.  I have done 3 days.  HTH

I wouldn't risk it, might be best to let them know a cake cant hold up for that long and see if someone would be willing to get it closer to the date of wedding. Three days ahead is my limit.
