Buttercream Icing

Hello I was wondering if someone could give me some tips on icing. I use the Wilton Snow White Buttercream recipe and I have trouble with it. When it crust it cracks and then my cake has cracks in it. Please help if you know anything that may help. Willing to try a new recipe if I need to.

Is your cake on a stiff board or plate? If it flexes then the cake flexes a little and can cause the icing to crack.

  • Yes I them on a cardboard cake board.  It cracks before I take it off the stand.

Maybe you icing is too stiff of a consistency.

So should I maybe add a extra tablespoon of water and see if that helps?

Just trouble shooting but that would be the 1st thing I would try

Adding a bit of heavy cream or shortening should help. The extra fat should make it less dry.

Cream would make it taste a lot better than water!

whatever liquid you are using, you just need to add a little more of it. Then, it won,t crack. And yes, a stable board. hth It just sounds like it is a little too stiff for frosting the cake.

Cream would make it taste a lot better than water!

Yes, please use milk or cream, and it shouldn't crack. It should taste WAY better, also.
