AI am looking for a strawberry cream cheese icing that is not runny. The one I use sets but then it wants to fall over. I use frozen strawberry in juice and puree them. Can anyone tell me a good icing that is sturdy.

Once you have pureed your strawberries in the juice, you need to boil/simmer it on the stove for a while to get rid of excess water which is what is making your buttercream runny (assuming it is not runny before you add the strawberries!). You can also do it in the microwave in 30 second bursts or so, stirring in between. You are really looking to get a very thick gel/paste from your reduced strawberries, so you get all the flavour but not the water. Put it in the freezer for a few minutes to cool down before adding it to the buttercream.
