I Need Help With Italian Nocciola Cake Filling Recipe!!!

I have a cake due this weekend with an italian nocciola cake filling. I cant find the recipe anywhere.  If anyone could help, I would really appreciate it!!!!

Well, nicciola just means hazelnut, there is 'torta di nocciola', which is a traditional Italian cake, it is not filled though.

If you just want a good hazelnut filling, a ganache with chopped hazelnuts and even some nutella stirred in could be yummy. Or you could do a whipped frosting with hazelnut cream, or hazelnut paste mixed in.

 

It really depends what kind of cake you are making though, does it need to be fondant covered?

 

If you can't find hazelnut paste, it's very easy to make. And you can mix it into a lot o different frostings, I put it in IMBC all the time, and it is amazing.

 

3 egg whites

2 cups confectioners sugar

1 pound chopped roasted hazelnuts

2 teaspoons hazelnut liqueur

 

Grind the nuts in a food processor a little at a time until a coarse flour. Once done add in the other ingredients and blend til a paste is formed, and that's it.
