I need some help and advice........I am doing a wedding cake for a client. A simple two tier stacked cake with ribbon trim and simple white scroll work on the side of the cake. It will be a 12 inch two layer with an 8 inch two layer top tier.
I want to use a 14 inch separator plate, with the feet down as the cake base. A lady told me I needed to also use cardboard base on top of that. (several rounds with silver foil covering). Why do I need to use cardboard also? I was to build on the plate and not worry about using rounds also. There will be no boarder on the cake since there will be a fabric ribbon around the base of each tier. I hoped I have explained this well enough. Also, I was going to build the 8 inch top layer on an 8 inch separator Plate as well, and not use any cardboard rounds. Would this be okay?
Any suggestions would be great. I have a licensed and inspected commerical kitchen but don't do alot of wedding cakes, so I need to bend the ear of you experienced ones out there.
