Any tips on how to do this design?

The bottom tier.  I have no idea how to do the "up/down" pattern seen here.  I may not do three together like that..I may do one at the top and on at the bottom of the tier,  Anyhow, does anyone have any tips on how to do this and keep it straight and even and professional looking?

I've heard of many people having luck using Jessicakes wax transfer technique for this sort of pattern.

Though it's difficult to see the seams, I suspect those are separate segments -- cut and applied very carefully and accurately -- rather than single, continuous zig-zag strips.

 

You could use some type of ribbon cutter so all the strips are exactly the same width, then cut even length sections with angled ends. A quilter's ruler would be helpful to cut the angles. Take care to make sure the fondant doesn't stretch when you apply it to the cake, and make sure the edges are perfectly matched up.

Buy some chevron cutters.  You can find them on etsy.
