Giant cookie cakes

Hello All,
I've just got into decorating cookies in the last year and very recently started doing giant cookie cakes. My question is, how do you get the smooth icing look on cookie cakes--like, if you were decorating some sort of image on it and not just lettering? When I do sugar cookies of course I pipe and use flood icing. But with the cookie cakes I use buttercream. Dumb question I know, but how am I to get the buttercream smooth on it? Thanks so much!

Over the years I've made a ton of those giant cookies (some can be seen in my gallery).

I never iced the whole cookie - just decorated them w/b'cream.

My suggestion is to make the icing thick enough that any unevenness isn't noticed.  Be sure your icing in on the thin side & use a dough scraper or off-set spatula.
