Not a professional baker just doing this as a hobby. Decided I wanted to try and incorporate a ball cake into a three stack tier, and decorate it like a globe. Now my usual sponge recipe is a no go for this as the practice one I did the bottom half of the ball completely collapsed.
I had a thin board separating both cake halves and thought this might be enough but it wasn't. I plan on trying a denser cake and only separating and filling each half into two layers instead of four but can I add dowels do you think? If so would you dowel all the way through and lose the middle cake board in the ball pan or would you dowel right through and cut a hole in the board?
My recipe for the other tiers is fine, tried and tested, I don't know why this is being so funny. Rung out of time now too as I have to start the cakes on Thursday evening as there's going to be quite a lot of decoration on the other tiers.
