I have about a cup of leftover dulce de leche in my fridge and no clue what to do with it other than adding it to buttercream or filling macarons with it.  Any other suggestions?  I don't want this to go to waste.

Ha, I like this idea. You could make ice cream like was said or you could use it as a filling for cupcakes for yourself or family. You could drizzle it over a dessert like a slice of pie.

AI stand by my idea of eating it with a spoon. It uses up the product, and it saves you the work of trying to make it look like it's part of a different dessert just so that you can avoid the appearance of eating it with a sppon.

Eat it on toast, with or without butter, as you would any jam or jelly.  If its the real dulce de leche, this is as it is primarily eaten.  It's not just limited to baking!

Thanks for the suggestions everyone.  Didn't even occur to me that I could freeze the extra.

Costumeczar -- the reason I want to do something with it is so that I'll stop eating it by the spoonful lol.  I have zero self control when something tasty is in easy reach..
