I've made MMF both ways, by hand and with my stand mixer, hook attachment. I prefer kneading by hand, even though it is messier.

I prefer kneading by hand also, but I do it in the very same large bowl that I've melted the marsmallows in, never on a countertop/tabletop.

I purchased a very large stainless steel bowl from IKEA that works really well for kneading my fondant in. It's large enough that I can really work the fondant but still keeps the messiness contained.
