Covering A Sponge Cake With Fondant

Hi guys,

 

Will I have any problem covering a sponge cake with fondant? Below is the sponge cake recipe. It requires mixing the egg yolks with the other ingredients and whipping the egg whites and folding them together. Will this be strong enough to hold the fondant? I am thinking of making a 12" cake. Also, will it be too much to add a second layer (6 in) on top covered with fondant as well? I am new to this, so I would appreciate all of your feedback. Thanks.

 

  • 6 large egg yolks, at room temperature
  • 1 cup sugar
  • 1 teaspoon coffee/espresso granules 
  • 1 teaspoon cocoa powder
  • 1 teaspoon vanilla
  • 1 teaspoon water
  • ½ cup canola oil
  • 1 cup cake flour
  • 1 teaspoon baking powder
  • 6 egg whites, at room temperature
  • 1 teaspoon cream of tartar
