So I was after some different coral/seaweed methods for a cake, I've used fondant before but found myself running out of ideas when modelling.

This time I plan on using fondant again, but also doing some royal icing piping on a stencil. I was just after some ideas for different types of coral? (Not really liking the isomalt look)

is this sugar on the outside of this coral? How would I go about using that effect, how would I make it stick? http://cakecentral.com/g/i/1885845/a/1886845/coral-birthday-cake/

and in this picture, does anyone know the tip used to pipe the seaweed? http://cakecentral.com/g/i/1188081/a/1189081/for-my-twin-newphews-birthday/

Thanks!

When I made my Nemo cake I used grape stems dipped in different colors of Wilton Candy Melts. They were very easy and came out great!

To get the sugar to stick on the coral, I have brushed gum glue on fondant or fondant/gumpaste blend and then sprinkled with sugar.  I recently did a candy land themed cake and for gumdrop mountains, made the gumdrops out of fondant and then brushed with gum glue and sprinkled with sugar.

To pipe the seaweed, use a tip 67.

Good luck.  Love doing the ocean themed cakes.

Thank you so much! May I ask, the gum glue- is that home made or do you buy it from a cake decorating store?

actually it is a homemade this. Good news is it's very easy!! All you need is about a tablespoon of water and mix it with a pinch or more of gumpaste. Let sit for a bit until the piece of imparts has disolved or you can break up the gumpaste chunk with your fingers and mix into the tablespoon of water. Hope I helped! Also not sure how to send a link on here but if you go into utube and type in how to make a little mermaid cake, the video is great as she shows you how to do cute ocean figurines including coral and a few things I would have never thought of when I made my ocean themed cake!! Good luck :)

Another way to make the gum glue is one part of CMC and 20 of wáter.  Example 1/4 tsp CMC and  20  1/4 tsp (5 tsp of warm wáter)  you have to keep it in the refri.
