Please Help, How Do I Store An Iced Fruit Cake

Hi

 

This is the first time i have ever made a 2 tier fruit cake for a birthday. i have marzipanned 4 days ago and let it dry and i am going to use RTR icing and ice it today/tomorrow and then hopefully decorate the sides once it has dried. The cake is not going to be delivered until a week Saturday (8th June). Will it be ok to be iced now and how do i store the cake? Will it be OK in cake boxes in a cool dry place.

 

Also i am attempting to make a chocolate shoe which i have the mold for to sit on top of the cake. It needs to be a black shoe so i am going to use Wilton black melts. Is this the correct way?

 

I am completely new to this and am panicking that i will run out of time as i have roses to make yet as well.

 

So any advise would be really appreciated.

Your cake will be just fine don't worry. Like you say just keep it in a box (really that's just to stop any dust settling on it) in a room out of the sun, it could sit there like that for a month, probably longer!

 

just let your rtr air dry overnight and you'll be fine to start decorating it, if you find you're stressed for time you can stick things using stiff royal icing or chocolate melted just to that thick sticky, butter consistency point- if its very liquid it'll not help you stick things till it's cooled down.

 

I'd suggest working on your shoe asap as it will be the most difficult thing- and make a couple that way you can choose the best and you have a spare if one breaks!! (never happens when you have made 2 but ALWAYS happens when you only make one!! lol)

 

If you've not made roses before maybe give yourself about 3-5 roses an hour and again make a few extra so you can leave out any you're not so happy with.

Thank you so much for your quick reply and all of your advise it has been a really big help. Am going to make a couple of shoes tomorrow so fingers crossed they turn out ok.
