AI need 10lbs of fondant. It is very expensive to buy and ship that amount. Can someone share a MMF recipe for that amount. I'm sure I would have to make it in batches, but I don't know of the amount of ingredients change when making such a large quantity.

I only use MMF but I don't weigh it out. One bag of mini marshmallows, 1 tablespoon of water drizzled over the top. Microwave for 45 seconds to a minute. Stir just for a second to get the marshmallows all liquidy. Start adding powdered sugar until it gets to hard to stir. Coat your hands and countertop in powdered sugar and start kneeding the ball of dough until it feels like dough that can be rolled out. (I usually use about a half a small bag of powdered sugar but I tell my cake students not to follow an exact recipe because the feel is more important than the recipe)

 

To give you an idea. I can usually cover a 4-tiered round wedding cake (6-8-10-12 inch round) with 3 batches. You can make multiple bags in one batch as along as you have a bowl that'll fit them. I hope that helps!
