Gas Vs. Electric Commercial Convection Oven

Hi Everyone.

I'm in the purchasing phase of opening my own bakery.  I will be making cakes and cookies and my major appliance purchase is the convection oven (obviously).  I'm looking for recommendations, especially on gas vs. electric in a commercial convection oven.  I have been trying to research it and it seems that the gas convection ovens are cheaper to operate, but heat less evenly.  On the other hand, it looks like the electric ovens maintain temperature but cost a bit more to run and might produce a dryer heat??  I'm definitely looking for all information and knowledge that you professionals can impart to me.

I've only used gas powered confection ovens. I love them and never had any issue with it being consistent.
