I have made a few wedding cakes in my time - they were all 3 tiers. I have always transported the tiers separately and assembled on site however the latest one I have been asked to do is below.  They don't want want the 'fronds' coming out but those are the types of flowers they would like in addition to some leaves added in. This seems like it needs to be preassembled. The venue however is an hour drive, through windy hills and freeways and the idea makes me super nervous. Would it be best to put most of the sugar flowers onto each tier separately with royal icing and line them up and assemble on site or best to preassemble, put plenty of doweling in and hope for the best?  The flowers look to be all on wire, so would another option be to have that separate and just place it on right at the very end on site?

I deliver all my cakes assembled using a very sturdy support system.

With an SPS support system and a chilled cake I don't think you would have a problem. I also place the cake on a rubberized mat to pevent sliding. I'm in a very hilly area and have not had any issues yet...

If you were totally uncomfortable with that option I would try the wired flower route.

I've always used dowels in each tier and then one large long dowel down the middle. I have someone watch the cake as I drive to make sure it's not moving around too much... but I've never had any problems.  Just take it easy on the curves :)
