AHaving read a lot about different people's baking techniques on here, I just wanted to get a quick recap about some common tools and who uses them, or not, and why?
I will start by saying I am baking with an electric oven, so if these tools are meant more for gas or electric, I'd love to know...never been quite sure...
Bake even cake strips? I have and have not used these with varying degrees results both ways.
Heat core vs flower nail va nothing in cakes 12" and over? I have always used a heat core, but I hate it and feel it ruins the integrity of the center of my cake.
Have used bake even strips, but no tin the last several years. No heating core ever, nails once just to see what all the fuss was about.
Bake at 325 for longer. Never an issue even with large cakes. I prefer to use gas or electric convection.
I also bake at 325 without bake even strips or heating cores (12" is the biggest I've done) and my cakes are always level. I bought a flower nail once but when I got it home the glue that holds the top to the spike was clearly visible and I didn't want that getting into my cake.

And my electronic oven has a convection setting, but I'm thinking that having never used it before, now, when I'm making a wedding cake, might not be the time to test it out. Should probably stick with what I know...
AOh! Duh, clearly my brain is not quite awake this morning. Kept thinking she meant not to use them on pans made of tin! Haha

They're stainless steel, no glue, and flat. 1 in an 8" or 10", 3 in a 12", 4 in a 14", 3 in a 9x13, 4 in a 12x15, etc.
My cakes bake up evenly and fairly flat without a big hole in the middle to fill.
