My local bakery supply company has a product called "Rich's Hy-Vol Meringue Powder". I'm not sure what the Hy-Vol is all about, but he's got a great price for it... a 4.5# pail for about $28.
Question is, will I be buying 4.5# of a great deal, or 4.5# of something I can't use for cookies?
Has anone used this brand of meringue powder?
I haven't used it, but guessing it means "high volume" in your finished meringue. It would be easier if companies just said what they meant. :)

Thanks everyone for your comments so far! I want the meringue powder for cookies. I've never seen this high-volume thing, and maybe that means something else in other applications (more overall volume in a meringue used on a cake or pie?). Not sure if this Hy-Vol thing is good for royal icing.

UPDATE: After a heckuva lot of research... the Hy-Vol means that it additives so that the meringue really puffs up high for cakes. Not recommended for royal icing.
