It depends what kind of cake you've made.

How long is a piece of string?

Seriously there are some things in cake decorating that you need to figure out yourself - by testing your own product.

Can't tell you the number of cakes i have made in the name of 'testing' - I know how long they keep for in what conditions - whether they freeze successfully - and how long before mould appears

There are NO shortcuts for somethings - this is ONE of them !

AI'm making a few cakes for saturday and I wanted to make them earlier without freezing them if I don't have too. I'm making a caramel mud cake, raspberry cake, choc/ vanilla marble cake and a strawberry mud cake. I was planning on decorating them on fri/ sat.

My mudcakes last ages. I've had them sitting for a week or more, and they've been fine.

Others will last a couple of days, probably. Freezing won't wreck your cakes, though, if that's your worry. I'd freeze to be on the safe side if you're worried.
