Hello, I doing a cake over the weekend for my cousin and she don't want to use buttercream. she wants something a little less sweet, my problem is ive never worked with whipped meringue nor stable whipped cream, where i live there is not pastry pride or riches stable whipped cream. so i have to make whipped cream with knox gelatin. If you where in m shoes which would you use??  the cake is a carved cross 2 layers made from a 16x24 inch cake pan. I need to pipe boarders and a few roses. thanks in advance :)
