Hi there all. I am new to cakecentral. Based in UK and started making cakes a year a go as a hobby. I have my 2nd booking due in 2 weeks.

 

They want a 12 inch square sandwiched vanilla cake but it has to be eggless as some of the guests are intolerant to it. I am making cupcakes also and they have come for the tasting for this and loved them. However a day later i noticed the cupcakes went hard and dry. I do not want to use this recipe for the 12 inch cake (made with fresh milk, baking powder, self raising powder, unsalted butter and golden caster sugar). They like the cupcakes as they were not too sweet. I was going to scale the recipe for the cupcakes up to the size of the 12 inch cake. 

 

I have seen several recipes for eggless cakes but does anyone have one in metric size (not cups) for a 12 inch cake and also for it to taste great?

 

PS, the cake will be a spiderman cake with red fondant.
