How high do you guys normally do a standard round or sheet cake? I feel like a lot of the cakes I do are rather high.
I used to do 2 2-inch rounds stacked, so four layers, but that was usually too much cake for people who ordered, and it was super tall. So now I will do one 2-in round tortes, and the cake is about 3.5" high, and 4" with buttercream on top.
If there's a baby shower or other special occasion I will make the double rounds for effect.
My double layer cakes when finished are high. But that's because I top them that way. I'd rather give the customer a nice tall cake than throw away/eat all the cake tops.
Yeah, mine are rather high, and serve more than a standard size does. I do the same, two 2 inch layers/
I aim for 4 inches high per tier, as that makes it easier with the SPS system. No cutting the supports!
AI also try to keep it 4 inches or taller, but I like the aesthetic of a tall cake and it goes with my style of decorating. Because I have limited space in my home I don't have a lot of pans, so I'll sometimes do only 2x2 inch high layers, or sometimes I'll do 3x1.5 inch high. It depends on the pan size and the recipe.
Interesting... in the UK cakes tend not to be as tall.
Mine are a minimum of 3" before torting and filling... so anywhere from 3.25" - 3.5".
