I saw a really cool cake where each tier was off center. Somewhat like a spiral.  Any ideas how to make that? There must be some way to hold each tier as it cantilevers in opposite directions.

I think it would just be your usual support system, the majority of the cake is still over the cake below with only a small amount hanging over.

Easier than it looks icon_wink.gif
Attach a center dowel to your cake board and thread your cakes over it(cut a hole in the cake before hand). Of course you'd still need to use dowels for the individual tiers.
