I baked two sheet cakes on Sunday evening. Monday evening I put icing between them and stacked one on top of the other for a "double" sheet cake. I wrapped it in plastic wrap and slid in the refrigerator Monday night (I thought I put it in the freezer!!).

basically, this cake has been refrigerated since Monday evening. It is for a client for tomorrow (Friday). I slid it in the freezer this morning to at least give it 8-10 hours at a frozen temp. Is this cake still good or should I scrap it?

Thanks,,

Rhonda

It's probably fine to eat, but for a customer I would scrap it and start over. They may not eat it all in one sitting. You wouldn't want them to keep it any longer as it is already almost a week old.
