AI've been asked to make a fruit cake for a wedding but I've never made fruit cake only sponge has anyone got a good easy fruit cake recipe please :-)

Look up Delia Smith's rich fruit cake - you can't go wrong with Delia!!

Absolutely right Relznik!  I used Dela's rich fruit cake for my wedding cake - and it was lovely.  I use it all the time now for anyone who wants a fruit cake and my Christmas cakes.

The white( blond) fruitcakes are easy to make.  I didn't learn to make fruitcake until I was in my twenties and found the lighter colours easier to bake.   Be sure to put parchment paper on bottom on pans and I always put a tray or cake tin full of water underneath to help add steam to cook this thick cake. 

  You want the cake made well ahead to develope flavour as well.  ( Adding the rum a few times a week on the cakes sure made them delicious--- this can be skipped if not appropriate)  Toba Garrett has a great recipe in her books as well.

AWell I just made the Delia fruit cake you all advised it looks absolutely fantastic I wish I could cut it and try it but as its for a wedding I can't :-( but thanks for the advise hope it tastes as nice as it looks :-)

I use Eddie Spence's fruit cake recipe and it is amazing, just in case you want to try a different recipe in the future!

AJoandwade, trust me it will taste as good as it looks, give it a feed with either some brandy or non alcoholic juice and it will be lovely!! Lisapeps - I will definitely try out Eddie Spence's recipe, thanks for the tip.:D
