I just watcher her disco dust, she said about how it was edible, but I guess it doesn't matter as she cuts of the sides anyway!

So was I. I never referred to the lady in the video as stupid. I just said her method of cutting the cake was silly and ridiculous. now that other baker who says you get square cakes from cutting a round cake ... their intelligence is questionable.

Hi everyone, I am new here but I just want to thank you for this post. I am making a 2 tiered round graduation cake soon and I have no idea on how to cut it. I had initially watched the video you mentioned and was floored as well that someone would really throw out all of that cake! The info in this thread, specifically the link to cateritsimple is a great resource!

My neighbors moved and left their poor kitty cat to fend for himself. I feed him, but he has to be an outdoor kitty since I make cakes. Those jerks actually planned it - about the time their for sale sign went up, I noticed he wasn't wearing his collar any more. icon_sad.gif

Anyway, all that detail is irrelevant... All I really wanted to say is that anybody and their cat can make a video.

my cookies are prettier than your cookies because this is the second time i substituted my opalescent sanding sugar when i ran out of sugar to make the batch ha!

An indisputable example of a gap in her knowledge of the business.

If my cat knows the right people, it has a much greater chance of getting to make that video and connecting with high end customers. Something about this makes me wonder if that isn't at play here.

Ok, I get it now.... on her website it says her cakes are for "yummy people" and that she is "redefining the realm of cakes". There are some gorgeous ones, no question about that.

I just read her FAQ page.  Her cakes costs $9 to $18 per serving (and $300 minimum).  While appreciate art, there is no way I would want her to throw away 1/3 of the cake while slicing.  I fear I would turn into the father from Everybody Hates Chris - "you just threw away $100 worth of cake.  Stop!"

 

I don't like fondant but yeah my body couldn't take throwing away so much perfectly good cake.

i haven't read the whole thread and i'm sure this has been said before -- but y'know how we toss salt over our shoulder if we spill some or whatever that custom is--well to me it's like the caterer tossing a few lobsters or steaks or cordon bleu chicken breasts over his shoulder for no reason at all -- it's not up to them to purposely waste those costly portions of any of the food--not the cake not the meat not anything--'discard?

 

just cut it and serve it--that video should be removed imo --

 

i expect the servers to get fed cake if there's enough--it's not justified in any way shape or form to designate part of it as 'disposable' so servers can eat it --no way --

Pretty snarky reply if you ask me. I read that as "go ahead and hack it up then, who cares if it looks nice"....lol. Geez guys, we're doing it all wrong! We've been denying our customers the most important part of the whole experience, the way it looks on the plate! I'm pretty obsessive about the way my cake looks, but even that is just too ridiculous for me.

Ugh, I'm mad all over again. That's just ridiculous. "Part of why wedding cakes are so expensive". Lady....get a grip. Attitudes like that are exactly why we have to fight to earn trust with some people.
