I'm going to be making some jar cakes and shipping them, however I need them to be 100% organic.  I've got the cake covered but the icing is throwing me off.  I need something that's made of organic ingredients (obviously) but also be stable enough to ship.  It doesn't necessarily have to be a "buttercream"... it just has to be organic! :)

Any ideas?

Thank you so much!!!!!!!!!!!!  :)

You could make the standard American Buttercream with organic butter, organic powdered sugar, and organic cream... if it is too sweet, just add some salt to it... (I grind the salt extra fine if I need to use this type of buttercream)

It should travel fine and is shelf stable... if you are worried about the cream, you can use water but you will loose a bit of the creaminess in my opinion...

ASpectrum organics makes organic shortening. It's sustainably harvested palm oil, I believe.
