AHi all Today I made sponge cake but when I got it out the oven it Shrank down ! What did I it wrong ?

It could be a couple things.
- If you greased the pan and it's a type of batter that needed to cling to the pan sides for stability........that would make it shrink big time.
- Sometimes it's the recipe if it's got too much egg to flour ratio
- And if you over baked it that would make it shrink
To resolve this, next time line the bottom of the pan with parchment paper and don't grease the sides of the pan at all. Once the cake is cool run a thin knive around the edges and it should easily release for you.
